Light cucumbers, creamy avocado dressing, and that addictive crispy rice texture makes this one a total game-changer. You’ll need:

  • 3 cucumbers, thinly chopped

  • 1 cup edamame

  • 1 bunch green onions, chopped

  • 1 bunch mint, roughly chopped

Crispy rice:

  • Cook 2 cups long-grain basmati rice

  • Spread rice on a baking tray and eyeball in:
    • 2 tbsp soy sauce
    • 1 tbsp sesame oil
    • 1 tbsp chili garlic crunch

  • Mix well and bake at 400°F for 45–55 mins, until crispy

Dressing:

  • Creamy avocado cilantro (I’m obsessed with Lieder’s dressing, but here’s a similar DIY):

    • Blend 1 bunch cilantro, 2 avocados, Greek yogurt, garlic, lime juice, and olive oil until silky smooth
